I love strawberries! Much as I enjoy tropical fruit, I occasionally get a craving for summer fruit especially strawberries. The little local shops stock apple and oranges (strangely, no tropical fruit) and once in a while you can find a half rotting basket of unripe strawberries next to the mouldy packet of mushrooms.
A couple of years ago, frozen strawberries started appearing in the shops. Not regularly, but once in a while and they taste heavenly... They aren't much good for strawberries and cream, as they go mushy as soon as they are defrosted, but are great for use in cooking and, straight from the freezer, in smoothies.
We don't do dairy too well in our home, so I thought I'd experiment with coconut. Initially, I tried mixing the berries with coconut milk, but then found coconut cream gives a thicker creamier texture to the smoothie. If you're feeling virtuous, make the coconut cream yourself or do it the lazy way (like me) and buy a carton or can. You can substitute coconut milk if you're worried about the calories, but you won't get the lovely soft ice consistency. This smoothie is spoonable and packed full of the nutritional goodness of both strawberries and coconut.
Strawberry Coconut Smoothie
(1 large glass)
9 or 10 frozen strawberries
200 ml of coconut cream
1 tablespoon brown sugar (or white if you don't have brown)
